You need to make the recipe a few times to get the oven temperature and time right. And with a non-Teflon pan, the dough can end up sticking to the bottom, so you need to remove it from the pan carefully.

Detroit-style pizza has a thicker, more aerated crust. It's reminiscent of focaccia. Fluffy, but crunchy underneath. Originally, the trays used to store parts for Detroit's car factories were used to bake the pizzas, which gave them their famous rectangular shape.

  • 1. Mix the ingredients and knead the dough;
    Wheat Flour (250 Grams) Dry Yeast (2 Grams) Salt (5 Grams) Olive Oil (2.4 Grams) Water (165 Grams)

  • 2. Transfer to a container and leave to stand for a few minutes;
    Rest time: 5 minutes; Total time: 5 minutes
  • 3. With wet hands so the dough doesn't stick together, roll it out and transfer it to a greased jar with a lid. Leave to rest in the fridge;
    Olive Oil (1.2 Grams)
    Prep time: 2 minutes; Rest time: 12 hours; Total time: 12 hours and 2 minutes

  • 4. Grease a rectangular mold and carefully remove the dough from the pot with wet hands. Divide it into equal parts and stretch each part so that it takes up the entire shape. Leave to rest for a few minutes;

  • 5. After a short rest, with wet hands, press the dough into the corners of the rectangular mold, making it an even thickness. Then let the dough rise;

  • 6. Place the dough in the preheated oven to pre-bake it before adding the topping. Use lower heat only;

  • 7. Add the toppings of your choice. Detroit-style pizza usually has a generous amount of tomato sauce and cheese, with the cheese covering the entire dough right up to the edge;

  • 8. Bake at a lower heat in the preheated oven until the topping is completely cooked, then turn on the grill for a few more minutes until the cheese begins to bubble.

General Notes:

To get crispy cheese on the sides, you need to add a lot of cheese right up to the edges and bake it until it's crispy. To get a crispy cheese you need to use types of cheese that aren't as fatty (like Mozzarella and Provolone, but not like Catupiry and Cheddar).
