Do you live abroad and can't find any sour cream? Do you feel like eating a warm cheese bread, fresh out of the oven, but you've run out of sour cream? This recipe allows you to make delicious, aerated cheese bread using only sweet starch (which you can find under the name tapioca/cassava starch outside Brazil). The secret is to add baking powder! In traditional cheese bread, the sweet starch gives the dough elasticity, while the sour starch helps to expand and make the bread aerated. Baking powder acts in a similar way to sour cream, making the cheese bread rise and become very aerated.

  • 1. Preheat the oven to 220°C, bottom heat, without convection;
    Prep time: 1 minute; Total time: 1 minute

  • 2. Bring the milk and oil to the boil together. As soon as it boils and the milk covers the oil, turn it off;

    Prep time: 3 minutes; Cook time: 1 minute; Total time: 4 minutes
  • 3. Pour the mixture of boiled milk and oil over the starch and mix well (use a fork). The mixture will look sandy;
    Sweet Tapioca Flour (115 Grams) Salt (1/2 Teaspoons) Baking Powder (5 Grams)

  • 4. Once it has cooled, add the cheese and eggs and mix. The dough should be sticky. If it's too dry, add a little milk. If it's too liquid, add more sprinkles;
    Mozzarella Cheese (65 Grams) Eggs (1 Unit)

  • 5. Roll the balls in your hand or with the help of an ice cream scoop. Grease your hand (and spoon) with oil to prevent sticking. You can freeze the ready-made balls to bake at another time;

  • 6. Place the balls spaced out on the baking sheet (so they don't stick to each other) and bake for around 15 minutes. Serve according to their color. If frozen, place them in the oven and bake for 20 minutes.
